Amaç: Enkapsüle propolis tozlarının 4, 25 ve 35 °C de nem sorpsiyon izotermini,
termodinamik özelliklerinin ve üç farklı depolama bağıl nem içeriğinde tozların depolama
stabilitesinin belirlenmesi.
Materyal ve Yöntem: Tez çalışması kapsamında hammadde olarak püskürtmeli kurutma ve
dondurarak kurutma yöntemleri ile mikroenkapsüle edilmiş propolis tozları kullanılmıştır.
Standart statik, gravimetrik yöntem kullanılarak 4, 25 ve 35 °C’de nem sorpsiyon izotermleri
dokuz farklı bağıl nem değeri sağlayan doygun tuz çözeltileri kullanılarak belirlenmiştir.
Literatürde bulunan 12 farklı model sonuçlara fit edilmiştir. Termodinamik özellikler nem
sorpsiyon izotermlerinden hesaplanmıştır. Depolama analizleri 26 gün boyunca 60 °C sıcaklık
ve %17, 29 ve 42 depolama bağıl nem içeriğinde gerçekleştirilmiştir.
Bulgular: Sorpsiyon analizleri sonucunda her iki yöntem ve her üç sıcaklık için kritik su
aktivitesi değerinin 0,7, ve izoterm şeklinin Tip III izotermine uygun olduğu belirlenmiştir.
Enkapsüle propolis tozlarının en iyi GAB ve Ferro Fanton modellerine uyum sağladığı
belirlenmiştir. Enkapsüle propolis tozlarının sorpsiyon ısısı ve diferansiyel entropi
değerlerinin denge nem içeriğin artması ile azaldığı, Gibbs serbest enerji değerinin sıcaklık
artışıyla azaldığı ve negatif değerde olduğu, yayılma basıncının ise sıcaklığın artması ile
yükseldiği; her iki yöntemle de enkapsüle edilen propolis tozlarının adsorpsiyonu için integral
entalpi ve entropi değerlerinin artan nem içeriği ile azaldığını açıkça göstermektedir.
Enkapsüle edilen propolis tozlarının depolaması sonucunda depolama süresi ilerledikçe nem
içeriklerinin arttığı, su aktivitesinin ise belirli bir güne kadar arttığı daha sonra stabil kaldığı,
camsı geçiş sıcaklığının her iki yöntem içinde depolama bağıl neminin artması ile düştüğü,
toplam fenolik madde içeriğinin ise depolama süresince azaldığı saptanmıştır. Enkapsüle
propolis tozların toplam fenolik madde miktarının birinci derece kinetik bozunma modeline
uygun olduğu tespit edilmiştir.

Sonuç: Enkapsüle ürünlerdeki kaplama malzemesinin sorpsiyon izoterm tipini belirlemede
oldukça etkili olduğunu anlaşılmıştır. Depolama sırasındaki toplam fenolik ve yüzey fenolik
madde miktarındaki değişimlerin yüksek olmaması etkili bir enkapsülasyon işleminin
yapıldığını ve üretilen tozun depolama koşullarında stabil olduğunu göstermiştir. Diğer
analizler için kinetik modelleme sonucu anlamlı sonuç bulunamamıştır. Bunun için daha uzun
depolama süresi, yüksek sıcaklık veya daha yüksek depolama bağıl nem içeriklerinde
depolama analizlerinin gerçekleştirilmesi önerilmiştir. |

Objective: Determination of the moisture sorption isotherm, thermodynamic properties of
encapsulated propolis powders at 4, 25 and 35 °C and the storage stability of the powders at
three different storage relative humidity contents.
Material and Methods: Within the scope of the thesis, spray dried and freeze dried
microencapsulated propolis powders were used as raw materials. Moisture sorption isotherms
at 4, 25 and 35 °C were determined using a standard static, gravimetric method using
saturated salt solutions providing nine different relative humidity values. The results were
fitted to 12 different models in the literature. Thermodynamic properties were calculated from
moisture sorption isotherms. Storage analyses were carried out at 60 °C for 26 days and at of
17, 29 and 42% storage relative humidity.
Results: As a result of the sorption analysis, it was found that the critical water activity value
for both methods and all three temperatures was 0.7, and the isotherm shape was suitable for
Type III isotherm. It was determined that the encapsulated propolis powders fit the best GAB
and Ferro Fanton models. The sorption heat and differential entropy values of the
encapsulated propolis powders decreased with the the equilibrium moisture content. The
Gibbs free energy value was negative and decreased with the increase in temperature. In
constant, the spreading pressure increased with the increase in temperature. It clearly shows
that the integral enthalpy and entropy values for the adsorption of propolis powders
encapsulated by both methods decrease with increasing moisture content. As a result of the
storage of the encapsulated propolis powders, it was found that the moisture content increased
as the storage period progressed, the water activity increased until a certain day, then
remained stable, the glass transition temperature decreased with the increase of the storage
relative humidity in both methods. The total phenolic substance content decreased during the

storage period. It was determined that the total phenolic content of the encapsulated propolis
powders was suitable for the first order kinetic degradation model.
Conclusion: It has been understood that the coating material in the encapsulated products is
quite effective in determining the sorption isotherm type. The fact that the changes in the
amount of total phenolic and surface phenolic substances during storage were not high
showed that an effective encapsulation process was carried out and the produced powder was
stable under storage conditions. No significant results were found as a result of kinetic
modeling for other analyses. Thus, it has been suggested to carry out storage analyzes at
longer storage times at high temperature or higher storage relative humidity contents. |
