Yaş meyve-sebze toptancı pazarı için lojistik sistem modellemesi

Abstract

Çeşitlilik ve tedarik zincirindeki aktörlerin sayısı bakımından gıda ürünleri, sosyo-ekonomik değere sahip stratejik önemi olan ürünler olarak bilinmektedir. Bu ürünlerin başında yaş meyve-sebze ürünleri gelmektedir. Bu çalışmada toptancı olarak adlandırılan işletmelerde yaş meyve-sebze tedarik zinciri kapsamında, lojistik sistem modellemesi yapılarak sistem iyileştirmesi sağlanması ele alınmaktadır. Araştırmanın amacı yaş meyve-sebze toptancı pazarı için maliyet, zaman, mekân ve ürün bulunabilirlik faydası yaratan bir lojistik sistem modeli oluşturabilmektir. Yaş meyve-sebze toptancı pazarında lojistik sistem modellemesinin detaylı olarak sunulduğu çalışmada önerilen model ürün akışı, iş akışı ve ticari işlemlerin akışından oluşmaktadır. Yaş meyve-sebze sektöründe faaliyet gösteren 36 işletme üzerinden anket yoluyla elde edilen veriler nitel araştırma yöntemleri kapsamında yapılan vaka çalışmaları ile lojistik sistemde üç ana faaliyet grubundan (tedarik, işleme, dağıtım) oluşan iş süreçleri değerlendirilmektedir. Önerilen lojistik sistem modeli ile yaş meyve-sebze ürünlerinin doğru yerde, doğru zamanda, doğru miktarda ve doğru maliyetle bulunabilirliğinin iyileştirilmesi hedeflenmektedir.

Food products in terms of number and diversity of actors in the supply chain are known as products of strategic importance with a socio-economic value. It comes fresh fruit and vegetable products at the beginning of these products. In this study, the wholesaler called enterprises within the scope of the fresh fruit and vegetable supply chain logistics system modeling is addressed by making the provision of system optimization. The purpose of the research cost for fresh fruits and vegetables wholesale market, time, place, and product availability to posit a logistics system that creates help model. Fresh fruit and vegetable wholesale market is presented in detail the logistics system modeling study recommended model product flow, workflow and consists of commercial operation of the stream. Fresh fruit and vegetable sector 36 business data obtained through the survey through qualitative research methods in logistics system with case studies carried out under three main activity group (supply, processing, distribution) business processes. The proposed logistics system model with the fresh fruit and vegetable products in the right place, at the right time and in the right amount and the right cost availability improvement.
