Abstract: | Aflatoksinler; özellikle Aspergillus flavus ve Aspergillus parasiticus mantarları tarafından
üretilen karsinojenik, teratojenik, mutajenik ve toksijenik etkileri olan bir grup mikotoksindir.
Bu çalışmada yaz ve kış mevsimlerinde ayrı olarak 30 inek, 30 koyun ve 30 keçi olmak üzere
toplam 180 süt örneği aflatoksin M1 bakımından ELISA metodu ile incelenmiştir. Analizler sonucunda
inek sütlerinin yaz mevsiminde 3’ünde (%10), kış mevsiminde 15’ inde (%50), koyun sütlerinin yaz
mevsiminde 1’inde (%3.3), kış mevsiminde ise 5’inde (%16.6) aflatoksin M1 saptanmıştır. İncelenen
keçi sütlerinin ise hiçbirinde aflatoksin M1 tespit edilememiştir.
Yapılan değerlendirmede; inek sütlerinin 1’inde, koyun sütlerinin 1’inde saptananAFM1
düzeylerinin, Türk Gıda Kodeksi Yönetmeliğine göre kabul edilebilir aflatoksin M1 sınır değerinin
üzerinde (> 50 ng/l) olduğu görülmüştür.
Bu çalışmanın sonucunda kış mevsiminde elde edilen sütlerin yaz sütlerine nazaran aflatoksin
M1 kontaminasyonunun daha yüksek olduğu belirlenmiştir. Aflatoxins are a group of mycotoxin with potent carcinogenic, teratogenic, mutajenic and toxigenic effects, produced by certain species of Aspergillus flavus and Aspergillus parasiticus. In this study, 180 raw milk samples (30 cow, 30 sheep and 30 goat) analyzed in order to determine aflatoxin M1by using ELISA method in winter and summer seasons. The result of analyses showed thataflatoxin M1 was detected in 3 (10%) cow's milk samples analysedin summer season and 15 (50%) in winter; in 1 (3.3%) sheep milk in summer season and 5 (16.6%) in winter. No aflatoxin M1 were determined in any of the goat samples analysed. In 1 of cow milk and 1 of sheep milk samples, the toxin levels were found to be above theofficially reasonable limit value (>50 ng/l) recommended by Turkish Food Codex Regulation. As a result; the level of aflatoxin M1 contamination in milk samples collected in winter season was higher than those collected in summer season. |
